Caramel:
1 c butter
2 c Brown Sugar
1/2 c Corn Syrup
1 tsp salt
1 tsp vanilla
1/2 tsp baking soda
Directions:
Preheat oven to 250 degrees. Pop enough popcorn to make 6 quarts and set aside. Melt butter in saucepan over medium heat. And sugar, corn syrup, and salt. Mix well. Bring to a boil, Stirring constantly. Once it comes to a boil, let it boil for five minutes without stirring. Remove from heat and stir in vanilla and baking soda. Be careful; it will bubble up. Pour over popcorn and two large bowls and coat well. Be careful; it’s very hard. Pour the coated popcorn onto two large baking sheets and place in the oven. Bake for 30 minutes, or until dry, stirring every 10 minutes. Remove from oven cool for a couple of minutes then break into pieces and store in an airtight container.
